You would normally uninstall templates like any other extension (Extension Manager). Double check the assignment since you can assign a template to an individual menu item. Maybe something is still using it that you're unaware of (even though you said you have checked this - check again would be my advice).
Which specific templates do you mean? Are they templates left over from Joomla 3 (following a migration to Joomla 4) or are they 3rd-party templates you installed earlier, and now want to remove?
Note if you were to uninstall Cassiopeia it would be reinstated at the next Joomla update.
